Can I spend extra rings on the final search roll?

The final search roll for destroying the One Ring follows the normal search rules: roll 1 die for each Nazgûl and shadow troop present, plus 1 die for each hope missing from the hope track [p.12 — Fellowship / Destroying the One Ring]. As with any search roll, characters who are present may spend Resistance to reroll a die, and after rerolling once, additional Resistance can be spent to reroll again [p.20 — Rolling Searches].

The "Fate" search result also lets any characters present reroll 1 die for each Resistance they spend, which functions the same way during this final roll [p.11 — Results].
