The moment you gain the 3rd or 4th Star, if you can reveal a 1/2/3/4/5 in your matching color you will complete the task. When revealing, does that mean just show the card or does it mean play to the field?

You only need to reveal the card in your hand; you do not play it to the Field.

In Stage E, when you gain the 3rd or 4th Star, if you can reveal a 1/2/3/4/5 in your matching player color, you complete the task [p.41 — Task Cards]. The rulebook explicitly states "reveal," not "play," so showing the card face up is sufficient to fulfill the task [p.41 — Task Cards].
Watch out: You do not need to play the card to the Field to complete the task. Simply revealing it in your hand is enough.
